Agreed. I’m not a big sweet eater with cakes and pies . . . but a good cookie = GOOD!
I WISH I wasn’t a big sweets eater. Sadly, it is my weakness.
I tend to reach for salty crunchy treats . . . and chocolate. 😆
Every year I say I’m not baking (there are 2 of us and my husband doesn’t have a sweet tooth). Then the carols start playing and everything is festive. I should find a great bakery and buy a half dozen. That would do me!
I might have to bake a batch of Scottish Shortbread in honor of Cookie Day!
Shortbread is one thing I don’t make and my husband likes. Go figure!
I have never made shortbread because my great aunt, my grandmother, my mother, and my sister always made it for me!
So this will be my first attempt. But I think I’m gonna do it!

I did bake a batch of Shortbread . . . but I forgot to take photos. The cookies are good with “room for improvement.”
* I should have cooked them a bit longer, or at a slightly higher temperature. They seem a bit “gummy” instead of crisp.
* I used unsalted butter and didn’t add any salt. I think next time I would use salted butter OR add a bit of salt.
But BFF is enjoying them. A lot. 😀
I used to bake 10-12 different kinds of cookies at Christmastime. I felt that I had to, so I did. Now? I make one batch a year, maybe. We get older, we get wiser &/or lazier!
We used to spend an entire day baking dozens and dozens of Christmas Cookies . . . until I read Simplify Your Life by Elaine St. James. Best Book Purchase Ever!
Now, we make “place and bake” cookies on occasion. No mixing required. 😉
But, today, in honor of National Cookie Day, I am going to make a batch of Scottish Shortbread. The butter is on the counter!

Uh oh! I missed National Cookie Day. Maybe I could make some for the 14th instead of the 4th. I like to have some around for Christmas Day.
