For Quarantines, Stock Up On Beans! March 17, 2020

Medieval_kitchenIf you’re wondering which canned goods to put in your grocery cart to keep you satisfied during COVID-19 quarantines, start with beans!

They’re loaded with Fiber, Iron, B Vitamins, and Protein for a few cents a serving.

Eating beans will aid digestion, lower cholesterol levels, and regulate blood sugar (reducing the risk of diabetes).

Beans are good for your heart, great for your waistline, and they might even reduce your risk of colorectal and other cancers.

And they are so versatile ~ add them to soups, stews, or casseroles; whip up a batch of hummus; add garbanzo beans to your tossed salad; serve refried beans for Cinco de Mayo; enjoy a hearty bowl of black bean soup; etc.

Aah . . . that’s better!

True ~ if you can get them, carrots, celery, cabbage, potatoes, onions, and tomatoes all have a long shelf life. Oranges and apples keep well. Bananas ~> not so much.

BFF’s favorites are garbanzo beans and baked beans. He’ll eat other beans in soups and casseroles.

That’s funny. Limas are my least favorite bean (unless they are drowned in creamed corn, and even then ~> “suffering succotash!”)

I love beans, especially black beans. I’ll eat them wrapped in a flour tortilla with shredded cheese. Derek calls it the “bean nothing wrap.” 🙂

My kind of meal ~ delicious, nutritious, quick to fix, and easy to pay for! I love black beans and rice too. And cheese is always a great complement for that combo.

Garbanzo beans (also called chick peas) are a favorite of ours ~ tossed in salads, processed into hummus, or made into a dip with peppers, garlic, mayo and parmesan cheese. I posted that recipe a few weeks ago.

My sister said that her store (in Orlando) is limiting people to 2 cans . . . but I don’t know if that’s 2 cans period, or 2 cans of anything that appeals.

I usually keep a bag of lentils at the ready . . . but I stocked up and have TWO! 😀

Enjoy that soup. My Bridge partner is on her way back to Toronto from here (as are a number of our other Canadian friends) ~ her healthcare coverage out of the country will end on 3/23, so she thought she better head home, despite the still chilly damp days.
