Curried Pea & Almond Salad

1 pkg. frozen peas
6 oz. almonds
2 ribs celery, chopped
1 lb. pasta, cooked
1/3 c. vegan mayonnaise
2 tsp. curry powder

Cook pasta per package directions. Drain.  Stir in celery, peas, almonds (and any other cooked veggies that appeal ~ I added asparagus and carrots).  The heat of the pasta will “cook” the peas.

Combine mayo and curry powder. Pour over salad and toss well.  (You may want more dressing.)  Good hot, warm, or cold.

Aah . . . that’s yummy!

Sounds yummy Nancy!

The original “salad” (from a W&M Cookbook) was just peas, almonds, and the dressing ~> but I like to play around with recipes, using them as loose templates . . .

Or springboards. {{BOING BOING}} 😀

Yummy!

Adding in the asparagus kicked it up a notch. It would be delicious with so many different veggies.

Jill Weatherholt - April 11, 2018

I love asparagus!

nrhatch - April 11, 2018

We’ve had some delicious asparagus in the pat few weeks. A yummy Spring treat.

Sounds yummy, I’ll have to give it a go 🙂

nrhatch - April 11, 2018

Enjoy! I love curry and probably added more than called for in the recipe.

I Like it in Chicken Divan LOL 🙂

It’s one of my favorite “go to” spices ~ with rice, potatoes, veggies, and, yes, even fruit!

C’mon, when are we gonna get your recipe for tacos?

Umm, “veggie” tacos? You have committed a mortal sin.

nrhatch - April 11, 2018

And there is a cow out there thanking me. MOO!!! 😀

Thanks!

It’s a fun recipe ~> mix it up . . . and mangia. Enjoy!

I like recipes that start with pasta and you add veggies. What’s not to like?

nrhatch - April 11, 2018

Exactly!

7. L. Marie - April 12, 2018

Another great recipe! Looks very refreshing with the fruit there.

nrhatch - April 12, 2018

The fruit was a nice complement to the curry.

8. Ally Bean - April 12, 2018

Anything with curry in it calls to me. This looks delicious and is the kind of easy recipe I adore. Thanks.

Thanks. Anything that can be made ahead is also a good thing in my book.

This dip gives a spicy kick to dippers.

I’ve been using the vegan mayonnaise. It’s quite good.

nrhatch - April 13, 2018

Agreed. I like it as well or better than “real” mayo. But this recipe could be made with whatever mayo is in the fridge.

This must indeed be delicious. Funny thing about peas! I hate peas…and that’s a hold-over I’m sure from some childhood catastrophe, because there really isn’t one other vegetable I don’t enjoy. But in times past I’ve learned that if I add frozen peas, it’s a game changer. I enjoy the salad. Yes, they thaw a bit, but they are somehow not on my “Oh NO” list! You can be sure I’ll try this combo!

nrhatch - April 17, 2018

I’m not a fan of a pile of “plain peas” on my plate . . . but I enjoy a splash of green peas in casseroles and in salads, like this one.
