Curried Pea & Almond Salad
1 pkg. frozen peas
6 oz. almonds
2 ribs celery, chopped
1 lb. pasta, cooked
1/3 c. vegan mayonnaise
2 tsp. curry powder
Cook pasta per package directions. Drain. Stir in celery, peas, almonds (and any other cooked veggies that appeal ~ I added asparagus and carrots). The heat of the pasta will “cook” the peas.
Combine mayo and curry powder. Pour over salad and toss well. (You may want more dressing.) Good hot, warm, or cold.
Aah . . . that’s yummy!

The original “salad” (from a W&M Cookbook) was just peas, almonds, and the dressing ~> but I like to play around with recipes, using them as loose templates . . .

Adding in the asparagus kicked it up a notch. It would be delicious with so many different veggies.

Agreed. I like it as well or better than “real” mayo. But this recipe could be made with whatever mayo is in the fridge.
This must indeed be delicious. Funny thing about peas! I hate peas…and that’s a hold-over I’m sure from some childhood catastrophe, because there really isn’t one other vegetable I don’t enjoy. But in times past I’ve learned that if I add frozen peas, it’s a game changer. I enjoy the salad. Yes, they thaw a bit, but they are somehow not on my “Oh NO” list! You can be sure I’ll try this combo!
I’m not a fan of a pile of “plain peas” on my plate . . . but I enjoy a splash of green peas in casseroles and in salads, like this one.
