In a mixing bowl, combine:

1/2 c. rolled oats
1/3 c. peanut butter
1 Tbsp. maple syrup (or honey)
1 Tbsp. warm water

Stir in chopped walnuts or pecans, shredded coconut, and chocolate chips.

Once well combined, roll into 1″ balls.

Chill for an hour, then store in a covered container in the fridge.

Aah . . . that’s YUMMY!

Yum! I love coconut. Thanks for sharing, Nancy. Happy Monday!

nrhatch - July 17, 2017

These are delicious . . . and (can be) healthy & nutritious!

Interesting that you don’t have to cook the oats.

nrhatch - July 17, 2017

I checked on-line to make sure that uncooked oats could be digested ~> oats are steamed to make “rolled oats” so they are already partially cooked before we buy them.

Sounds yummy!

nrhatch - July 17, 2017

We enjoyed them. Definitely will make them again.

Yum! I’m not a big peanut butter fan but a touch now then is good. I am in the middle of an intense brownie craving. Brownies aren’t usually my favorite. Especially if they are too heavy but the chocolate fairy sprinkled her dust and now the tummy wants what the tummy wants. Love coconut and I don’t find it in many recipes.

nrhatch - July 17, 2017

If you decide to make brownies . . . you can stir some coconut into the batter before baking.

A very apt name. They sound absolutely yummy!

BFF was “dubious” . . . but he liked them too!

mmmm Maple. (Drool) But I’ll skip the peanut butter

nrhatch - July 17, 2017

Maybe there’s a way to make something similar without using peanut butter. I tasted the peanut butter, but it wasn’t overwhelming.

Now these sound like a real treat 😊

I love the No Bake aspect . . . Along with no sugar, no eggs, no fuss, no muss. Plus they taste great!

👍

It looks like you’ve taken my advice from you last posting, and continued eating soft food.

nrhatch - July 18, 2017

I got my crown yesterday. Yay! Now I can eat anything I want.
