Want a Greener America???   Use less fossil fuel.

Take public transportation, ride a bike, walk, or carpool.

According to Green America:

* Offshore oil drilling generates about 730 million gallons of oil per year.

* If every American who currently drives to work alone were to carpool with just one other person, we would reduce our country’s oil consumption by 15 billion gallons per year and reduce carbon emissions by almost 300 million tons .

If each American took this simple step – one less car trip per week – we would eliminate the need for offshore oil drilling.

Next time you’re in the market for a car, look into buying a hybrid, plug-in hybrid, or pure electric car.

Eat less meat, or eliminate it from your diet entirely.  Raising cattle instead of growing grain is a waste of planetary resources and results in horrific abuses in the meat and dairy industries.

Wild Horses July 6, 2010

Why is the Bureau of Land Management (BLM) rounding up our wild horses?

Removing them from their native grazing land?

Chasing them down with low-flying helicopters?

Killing pregnant mares and unborn foals during the exhausting round ups?

Only to cram them into small pens and corrals?

Well . . . the meat WE eat has to be grazed somewhere.  And Cattle Ranchers have more clout in Washington than Wild Horses.

 If you are not already vegetarian, consider making the switch.

A vegetarian or vegan diet is better for you, better for the planet, better for the cows you would otherwise be consuming . . . and better for the wild horses.

Stop mindlessly eating beef, pork, and chicken.

Ignore Hillshire Farms ridiculous rallying cry of “Go Meat!” . . .

The future of the planet is at stake . . . not in steak!

Politicians Still Protecting BP!!! July 6, 2010

If you thought, as I did, that the oil spill in the Gulf of Mexico might cause our leaders in Congress to re-think their allegiance to British Petroleum and other mega-corporations, think again!

We’re paying their salaries, and their health insurance, and their retirement benefits and they are ignoring our health and well-being, and the health and well-being of this planet.

Even after passing 420-1 in the House, this bill to give power to investigate the BP Oil Spill could not even make it to the floor of the Senate due to objection from Republicans beholden to Big Oil:

It’s time for a change of leadership in this country.

Veggie Stir Fry July 6, 2010

When we first adopted a vegetarian diet, I went through my favorite recipes looking for ones that would be equally (or more) delicious without meat.

After modifying the recipes to omit meat, I ramped up the fiber by adding more veggies to the dishes.

Here’s our Stir-Fried Chicken recipe which now boasts only yummy, good-for-you veggies.

Delicious, nutritious, and no raw chicken to handle or cook ~ saving you both time and money!

1 green or red pepper, chopped
1 onion, chopped
3 carrots, chopped
4 ribs celery, chopped
2-3 cups of other veggies (broccoli, green beans, pea pods, baby corn, spinach)
1/8 head cabbage, chopped

In large sauté pan or wok, over medium heat, sauté 1 clove garlic and 1/2 tsp ginger powder in 2 Tbsp. oil.  Add peppers and onions.  Cook 1-2 minutes.  Add carrots and celery.  Cook 1-2 minutes.  Add remaining veggies, including cabbage.  Cook to desired doneness.

In a measuring cup, combine:

1 c. vegetable broth
2 Tbsp. soy sauce
1 tsp. honey
2 tsp. dry sherry (or white wine)
1 tsp. Chinese mustard

Stir.  Add mixture to cooked veggies.  Cook 1-2 minutes to allow flavors to meld.

Combine 1 Tbsp. cornstarch with 2 Tbsp. cold water.  Stir mixture into vegetables and cook 5 minutes to thicken the sauce.

Serve over cooked rice (yellow, brown or white) or stir into cooked spaghetti noodles for lo mein.

Other optional additions:  water chestnuts, bamboo shoots, almonds
