What is really happening in the Gulf of Mexico?  What is BP hiding?  Why is the Government acting to assist BP in its cover up efforts?

Here’s Anderson Cooper with a disturbing story on what’s really happening in the Gulf of Mexico and our Nation’s Capital:

First Amendment Has Been Suspended: The Spill and Transparency

It’s more than the oil gushing into the Gulf that concerns me . . .

It’s the transparent attempts by BP and the Government to keep what’s happening to our wildlife and our natural resources under wraps and behind closed doors.

It’s time to open up the area to journalists.  I, for one, want to see what’s happening.

Not only off the coast of Louisiana, but behind closed doors in our Nation’s capital.

Tomorrow is a brand new day . . . as long as we remember to let go of this one.

When we hang on too tightly to thoughts that are making us feel bad, sad, or mad, we are destroying our own peace of mind.

Some days are tougher than others ~ the Gulf Oil Spill, the animal abuse on factory farms, the seal slaughter in Canada, and other negative news can wrestle our normally upbeat demeanor to the ground.

People may upset our apple carts ~ intentionally or accidentally ~ causing us to lose our equilibrium. 

When that happens, we have a choice.

We can choose to focus on what isn’t working . . . making ourselves more and more unhappy in the process.

Or we can change our focus.

Each day is a new day.  Each moment is a new beginning. 

Right here, right now . . .

Sure, tomorrow is a brand new day, but why wait?

Mango Salsa July 3, 2010

Mickey-OKI love the name of this recipe . . .

Saying Man~GO or Sal~SA (or An~TON~i~o . . . Ban~DER~as) with the emphasis on the indicated syllables (not necessarily the correct syllables) makes me smile.

Saying Man~GO and Sal~SA in juxtaposition makes me smile even more.

Anyway, like many recipes, this one is rather fluid in terms of both the ingredients and quantities to use.   It comes from a cyber pal, Beth, who lives, loves, and laughs in West Virginia.

Enjoy!

Mango Salsa

Ingredients:  mango * avocado * tomato * jalapeño * cilantro *  red onion

Seasonings:  lime juice * garlic * salt * olive oil (2-3 tablespoons)

Dice desired fruits and veggies from above list.  Mix together with desired seasonings from list.

Chill overnight to allow the flavors to marry.

Serve with tortilla chips or as a side dish ~ either way, Mango Salsa is a wonderful way to give your fruit and veggie intake a boost for the day.

Nutrition Tip:  The more colorful our plates become . . . the more vitamins, minerals, fiber, and anti-oxidants (another fun word!) we are employing in our quest to improve our health and well-being.
